Zen Santoku is the Japanese form of the main chef's knife.
Santoku has a shorter blade length than the classic chef's knife, but with its excellent width and shape, it is super suitable for processing any type of food, vegetables, fruit, meat or fish. It is easy to handle, with less weight and does not take up too much space.
The Zen series has a core of VG10 stainless steel and a superior hardness of HRC61 on the Rockwell scale. The knives in this series have 37 layers of simple damask iron texture: That is 18 layers on each side of the core. It is finished with indentations on the top of both sides made by striking the blade and has the series name printed in Japanese.
The handle is made of black micarta, finished and additionally attached with two stainless metal rivets. This material does not shrink or deform, is approved for food contact and will last for decades

The knife should be protected from shocks or drops on the floor. The knife is not intended to be struck against. Do not wash in the dishwasher
