Ran Kiritsuke is the Japanese form of the main chef's knife.

The Kiritsuke shape is a mix of the classic chef's knife and the santoku knife.

The appearance of the kiretsuke is somewhat reminiscent of tanto blades, the tip of the blade is straight down like a point


However, this is the main chef's universal knife, super suitable for processing any type of food, vegetables, fruit, meat or fish.


The Ran series has a core of VG10 steel with a hardness of super 61HRC with a total of 69 layers of iron, i.e. 34 layers on each side of alternately soft and stainless steel, a total of 69 layers.

The surface of the blade has a distinctive damask pattern.


The handle is black micarta secured with two metal rivets and has a metal finish on the end. Micarta is FDA approved for food and is known to be extremely durable. It has a glossy finish and will last for decades.
