Short main chef's knife. The blade length is 150mm noticeably shorter than a standard main chef's knife.
It is lighter and does not need much space to handle
The Ran Plus series has a core of VG10 steel with a hardness of super 61HRC and 34 layers on each side of alternately soft and stainless steel, a total of 69 layers.
Dako Plus of the RAN series here the knife has hand engraved Kanji Japanese characters on the blade and has a marking on the metal end of the handle
The surface of the blade has a distinctive damask pattern.
The handle is black micarta secured with two metal rivets and has a metal finish on the end. Micarta is FDA approved for food and is known to be extremely durable. It has a glossy finish and will last for decades.
The name of the series is inscribed on the blade itself
