The soils are alluvial and range from calcium-rich marls and flysch sandstones in the more hilly regions to clay, sand and gravel in the valley. My grapes are harvested at optimum levels of ripeness. A gentle press was used to improve flavor extraction while imparting minimal color from the skins. To intensify the characteristics of my tropical fruits, a small portion of ripe grapes is added.
