Zen Santoku is the Japanese form of the main chef's knife.
It has a shorter blade length than the classic chef's knife, but with its excellent width and shape, it is super suitable for processing any type of food, vegetables, fruit, meat or fish. It is easy to handle, with less weight and does not take up too much space.
The Ran series has a core of VG10 steel with a hardness of super 61HRC with a total of 69 layers of iron, i.e. 34 layers on each side of alternately soft and stainless steel, a total of 69 layers.
The surface of the blade has a distinctive damask pattern.
The handle is black micarta secured with two metal rivets and has a metal finish on the end. Micarta is FDA approved for food and is known to be extremely durable. It has a glossy finish and will last for decades.
